This Festive Cocktail – How to Make It

We present a home-style interpretation of a drink featured on a new cocktail list. It's a large-volume prepared mix that's packed with the flavours of the Christmas time, which makes it perfect for a celebration. Reserve the remaining citrus syrup to use in brunch beverages, puddings, or to mix another batch of bikinis.

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (makes 850ml, enough for 10)

400ml decent vodka

For the Syrup: Combine every items inside a saucepan, heat until it reaches a light boil, mixing to dissolve. After that, remove from the heat and leave to cool down completely. Pour into a sealable bottle, close it and store in the fridge, it can be stored for up to four weeks.

Preparing the Premix: Combine all the liquid ingredients into one big jug, allow it to infuse for an hour, then strain best through cheesecloth, so it's fully clarified.

For serving: Pour 85ml of your batch mix to a mixing glass packed with ice, gently stirring carefully for a minute to cool it down. Strain to a frosted cocktail glass or similar, decorate with the cranberries and complete it by giving it a light spray of mandarin oil over the top.
